Noon strikes near Parmentier, and the room fills up fast. Red banquettes, marble tables, a glass roof overlooking the cobblestone street: the décor sets the scene for a Parisian bistro in full swing. The waiters circulate without waiting, the menu clearly announcing the color: pumpkin and parsnip velouté, beef stew with carrots, citrus pavlova. The plates arrive clean, generous and comforting. The flavors remain classic, sometimes too wise, but consistent with the spirit of the house. Here, you come to lunch efficiently, at a lively address in 11ᵉ, solid in its foundations and faithful to its traditional register.
