Winery presentation by Gault&Millau
Founded by Hervé’s grandfather, the Hervé Brisson estate is located in Vert-Toulon, in the Petit Morin Valley near the Saint-Gond marshes. The estate comprises 3.35 hectares of vineyards, including 3.05 hectares of Chardonnay and the remainder planted with Meunier. Hervé Brisson favors sustainable farming methods to protect the ecosystem and the connection between the soil, plants, wildlife, and water. This respect for nature and patience are reflected in the cellar through extended aging, both in oak barrels and in stoneware jars.
