Ingredients are selected with the utmost care, and flavor balances are constantly refined until the desired result is achieved. The baker invites you to step into a creative and original world, where flavor combinations tell a story and reveal the full intensity of the ingredients through contemporary pastries. Care, dedication, and precision are the key principles of his work. Currently traveling the markets of Puy-de-Dôme, his ambition is now to establish, rooted in his Auvergne heritage, a tasting room where the line between fine dining and traditional baking begins to blur.
