Paraguayan Horacio Zarate has brought a piece of his homeland to the banks of the Rhône, in this lovely stone house in the city center. The interiors immediately transport you beyond the continent, with their minimalist, plant-filled decor that reflects the Latin American influences at play. The chef skillfully blends his inspirations: an egg cooked at 64°C, bacon bits, mushrooms, pearl onions, and truffle sauce; baby potatoes prepared risotto-style with a seasonal mushroom ragout and peanut jus; sole meunière with coral lentils and seaweed tartare; a glazed Iberian pork tapilla, carcass jus with avocado honey, roasted butternut squash, or even an acai cheesecake with vanilla cookie. The tasting menu takes the exploration even further, with eight courses for 82 €. Well-curated wine cellar.
