Description

A restaurant with a Caribbean flair. Pierre Anglade has set up shop right in the heart of Tours, near Saint-Étienne Church and Prébende Park, to tantalize your senses with unique flavors that only he knows how to create. Originally from the island of Saint Martin, the chef learned the ins and outs of French and Caribbean cuisine from renowned chefs, which allowed him to refine his own culinary identity, infusing each of his dishes with a touch of Touraine and the Caribbean. Passionate about spices, he sparingly incorporates a nod to his roots into each of his creations, carefully seeking out, refining, and balancing each flavor without ever overshadowing the exceptional dish he aims to elevate. Smoked chicken accras with coconut punch, Creole-style Loire catfish ceviche, beef tataki with couac (that is, cassava semolina), John Dory fillet served with pélissigo (split peas, fresh corn, and mild chili peppers), or Djon Djon rice (black mushrooms from Haiti)—your taste buds will be delighted with every bite!
