This little restaurant is making a name for itself in the Toulouse area: just half an hour from the “Pink City,” Claire and Théo have clearly defined their vision, with sincerity but also legitimate ambition. Seats are hard to come by in every sense of the word: just five seatings, including Saturday and Sunday lunches, a single five-course menu for €110 (and occasional themed menus, such as the fall game menu) featuring cuisine that is often intriguing, sometimes surprising, closely tied to local produce, and complemented by a solid wine list that favors wines from small producers, some natural wines, as well as premium labels.
