Located between Chaource and Tonnerre, this historic establishment has been home to a 3-star hotel since 1912! Featuring a hotel, restaurant, and spa, the property is owned by the Enfert family, who have passed down this tradition of hospitality from one generation to the next. Today, Christelle and Cédric are at the helm, with Cédric offering elegant regional cuisine. The market-fresh menu is a great place to start, featuring—for €38—Champagne-style poultry with fig-and-raisin foie gras, guinea fowl with parsnips and a hint of coffee, and a pistachio and white chocolate fondant with raspberry sorbet.
