Christophe Aribert’s Bouillon is a resounding success—a bright, vintage-style setting with ’50s-inspired design, serving simple, down-to-earth cuisine. The execution is solid, and the prices are very reasonable: the egg with mayonnaise for €3.50, the pistachio-stuffed brioche sausage, the scorpionfish fillet with Basque sauce and cauliflower couscous, a veal roulade, baby potatoes and garlic cream, and a citrus crème brûlée.
