With its strong emphasis on a historic stay, the Château de La Vallière promises a weekend of lordly living, where guests can admire the majestic setting of a superb 14th-, 16th-, and 17th-century residence. Behind the Renaissance architecture lie stunning 16th- and 17th-century interiors, designed by the legendary Jacques Garcia. The atmosphere is as rich as it is impressive, and Jeffrey Pestana’s cuisine perfectly rounds out the experience, putting a modern spin on royal dishes. The “Henriette of England” menu features Touraine squash flavored with curry, black radish, and thyme-infused vegetable essence; grilled mullet with candied beets and tarragon; a Racan pigeon, Paimpol seeds flavored with marjoram, and a dessert of 72% peaty chocolate and black cardamom. Well-stocked wine cellar.
