Ever since he was a little boy, Douglas Aburto-Barria dreamed of becoming a chef. After gaining experience in Chile, his home country, and in Europe, this seasoned chef opened his restaurant in 2024 with his wife, Andréa. At his restaurant, every bite is a journey: his fusion cuisine, bursting with flavors, reimagines French, Spanish, and Latin American dishes. Fresh fish from the market, French meats, and Provençal ingredients allow him to create gourmet, hearty dishes. Maria Urrutia, a Chilean chef, also contributes to this cuisine made with love. Chilean ceviche, empanadas, arepas, and tortillas share the menu with cuts from the butcher, Vallabrègues andouillette, as well as tapas such as mussels in parsley butter, scallops au gratin, shrimp, and humitas. The wine cellar of this charming establishment—housed in a 13th-century building with a terrace in the inner courtyard—features over 40 wine selections. The Latin American team exudes hospitality and always has a smile. The atmosphere is friendly, with live music on the weekends. An off-the-beaten-path spot worth following on Instagram: @lacasaaustral.
