Gourmet Restaurant
On the road from Saint-Étienne to Andrézieux, this unassuming house along the “Blue Road”—an alternative route to the famous National Highway 7—is home to a pleasant restaurant, featuring Ludivine’s cooking and Angélique’s service. The establishment aims to keep alive the long tradition of roadside inns, where vacationers once stopped to rest. It offers thoroughly compelling “bistronomy,” featuring a mosaic of salmon seared over vegetable charcoal, beets, grapefruit, and walnuts, Timut pepper ice cream, a low-temperature-cooked haddock fillet with a delicate stuffing of bouchot mussels, potato espuma with mussel juice and citrus crumble, a seven-hour pork loin with tarragon and paprika, mushrooms, navy beans, and a sweet-and-sour reduced sauce, or a pear poached in white miso, served with a buckwheat flour cookie, miso caramel, and a light Greek yogurt espuma, along with kasha ice cream.
