Gault&Millau's review 2026
Gourmet Restaurant
In the heart of this 13th-century bastide, with its remarkable checkerboard layout typical of new towns in the Middle Ages, this European-style restaurant has been thriving since 2018 under the leadership of Anaïs, Julien, and Nicolas. The trio divides the tasks perfectly, resulting in pleasant service, refined French cuisine, and pastries of the same high caliber: a reimagined leek salad with vinaigrette, leek green purée, pear vinaigrette, pepper mayonnaise with fresh pear, a seasonal fish dish with soba noodles and nori, edamame, lemon-infused brown butter, pan-seared shimeji mushrooms with Asian vinaigrette, a fricassee of crispy veal sweetbreads with artichoke purée, plums and prunes, morel sauce, a dessert featuring Castillonès hazelnuts, a milk chocolate shell, praline, hazelnut mousse, and salted butter caramel. Well-stocked wine cellar (Château de Siaurac, Château Mercuès, Château de Pommard, Château La Rose-Figeac, Alain Jaume…).
