Xavier Malandran’s new restaurant in Mougins is a logical extension of his Provençal work, offering a modern and elegant take on the regional style. His dishes blend local ingredients with more contemporary ideas, such as the octopus carpaccio with ginger, lime, flying fish roe, and bergamot; an octopus pot-au-feu with clams and vegetables; and a Rossini-style beef tenderloin with meat jus and black trumpet mushrooms.
