A modest little stone house on the highway south of Dole, where Chef Bruno Pellegrini crafts elegant, classic cuisine. It’s precision work—well-executed takes on familiar recipes—featured in three set menus priced at 25, 40, and 62 €. Here you can enjoy pan-seared snails, parsley flan, butternut squash velouté with julienned Morteau sausage, a seared redfish fillet, buttered green cabbage, red wine matelote sauce, a roasted boneless quail, a stew of root vegetables, oyster mushrooms, and trumpet mushrooms, a Macvin-reduced jus, a frozen nougat with heather honey, and a Macvin-infused dried fruit caramel.
