Gault&Millau's review 2026
Gourmet Restaurant
South of Béziers, on the banks of the Canal du Midi, this remarkable country retreat with its wooded grounds offers a wonderful opportunity to escape the daily grind for brunch, afternoon tea, or lunch. Bringing this magnificent 1890s house—with its eclectic and Neo-Moorish influences—to life are Candy Miller and Charles Teboul, with Miller running the dining room and Teboul in the kitchen. The dishes showcase true culinary expertise: textural mussels with seaweed, sabayon, and flambéed citrus; a plate featuring beef, anchovies, Paimpol clams, and chanterelle mushrooms; a pigeon stuffed with contis; poultry and hay-smoked potatoes; and a chocolate mousse. Brunch is also highly recommended, with a set menu priced at €49.
