Gourmet Restaurant

Stéphane Prévalet’s restaurant is a sure bet in the prefecture. Opened more than twenty years ago by this former chef at Henriroux and Constant, the restaurant offers bistronomic cuisine of consistently high quality, featured on a frequently updated €40 set menu. The menu features smoked trout with black garlic cauliflower and a vinaigrette, kalamansi, and sesame; a gilthead sea bream with bergamot tabbouleh, eggplant caviar, and sauce vierge; and a duck breast cooked medium-rare with pistachio polenta and cherries in sherry. To finish, a crispy strawberry millefeuille with strawberries marinated in basil, or a dark chocolate cake with lychee sorbet and bergamot coulis.
