In a charming half-timbered house in downtown Troyes, Pierre Page and Clément Marquet serve up refreshing “bistronomy,” making this one of the most popular spots right now. The menu offers a wide range of dishes: seared langoustines with brunoise-cut peppers and Thai broth; turbot fillet with a shellfish emulsion; a leg of lamb confit for twelve hours served with a reduced herb jus; and a strawberry-rhubarb tartlet.
