A Georges Blanc outpost in the Prefecture, this superb brasserie—decorated in the restaurant’s iconic red—is a consistently reliable classic. Located on the ground floor of the Hôtel de France, it’s a restaurant steeped in tradition, featuring period-style décor on the veranda and classic dishes worth (re)discovering. On the menu: a ravigote sauce with confit leeks and a mayonnaise-topped egg; trout from the source of the Moulin de l’Être with Comté cheese sauce; the must-try Bresse chicken with cream and morels; and profiteroles with vanilla and hot chocolate.
